Recipe Challenge:  Jamie's Cold Soup Recipe

Gazpacho – The Easy Way!

  • 26-32 Ounces Crushed or strained tomatoes
  • 2 peeled cucumbers
  • one piece quality bread
  • 1 red pepper seeded, cored and chopped
  • one small clove garlic 
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil 
  • Soak bread in water and lightly squeeze out excess
  • Add all ingredients to a blender (perferaby a vitamix)
  • blend until smooth
  • chill 24 hours before serving
