Grace Ann’s Chocolate Amaretto Pie

  • 1/4 c unsalted butter
  • 1/2 c unsweetened cocoa powder
  • 1 c unsalted butter, room temp
  • 1 1/2 c superfine sugar
  • 1/4 c amaretto liqueur
  • 4 Pasteurized eggs, room temp (please note this recipe includes raw eggs and that holds some risk for some people.)
  • 1 9″ deep-dish pie crust, baked
  1. Melt 1/4 c butter in small saucepan.
  2. Remove from heat & stir in cocoa powder
  3. Cream 1 c butter with sugar & amaretto in large electric mixer
  4. Gradually beat cocoa mixture in.
  5. Add eggs one at a time, beating for 3 minutes after each addition.
  6. Continue beating until sugar is completely dissolved.
  7. Pour into crust
  8. Cover & refrigerate until firm, about 4 hours.
